Title: String Beans with Mustard Sauce

Yield: 6 Servings

1 1/2lbString Beans -- cut
  Lengthwise
1/4cOnion -- minced
1tbPrepared Mustard
2 1/2tsFlour
1tsSalt
1 Egg Yolk -- beaten
3/4cMilk
1tbLemon Juice

Cook beans as in Time Table, with onion. Meanwhile, combine mustard, flour, and salt in double boiler. Combine beaten egg yolk and milk, and add gradually, while stirring. Cook over boiling water, stirring constantly, until thickened; then add lemon juice, and pour over drained beans.
